Creamy Garlic Butter Tuscan Chicken

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • 1/3 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup fresh baby spinach leaves
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken breasts with salt and pepper. Sear for 5-7 minutes per side or until golden brown and cooked through. Remove and set aside.
  • In the same skillet, melt butter and sauté garlic for 1 minute until fragrant.
  • Add chicken broth, heavy cream, Parmesan cheese, and Italian seasoning. Stir until the sauce thickens slightly.
  • Stir in sun-dried tomatoes and spinach until spinach wilts.
  • Return chicken breasts to the skillet, spooning the sauce over them. Simmer for 3-4 minutes.
  • Serve hot with pasta, rice, or crusty bread.

Notes

  • For extra flavor, marinate the chicken with olive oil, garlic, and Italian seasoning for 30 minutes before cooking.
  • Use half-and-half for a lighter version.
