Ingredients
  

For the meatballs:

  • 1 lb ground turkey
  • 1/4 cup almond flour or breadcrumbs for non-low-carb option
  • 1 egg
  • 2 tablespoons chopped fresh parsley
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the sauce:

  • 2 tablespoons olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 can 14 oz diced tomatoes
  • 1/2 cup chicken broth
  • 1/3 cup sliced Kalamata olives
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley and feta cheese for garnish

Instructions
 

For the meatballs:

  • In a mixing bowl, combine ground turkey, almond flour, egg, parsley, garlic, oregano, salt, and pepper. Mix until just combined.
  • Form the mixture into small meatballs, about 1.5 inches in diameter.

For the skillet:

  • Heat olive oil in a large skillet over medium heat. Add meatballs and cook for 2-3 minutes on each side, until browned. Remove and set aside.
  • In the same skillet, sauté onion and garlic until softened, about 3 minutes.
  • Stir in diced tomatoes, chicken broth, olives, basil, paprika, salt, and pepper. Bring to a simmer.
  • Return meatballs to the skillet, cover, and simmer for 10 minutes, until meatballs are cooked through and sauce thickens slightly.
  • Garnish with fresh parsley and crumbled feta cheese. Serve as-is or with zucchini noodles or cauliflower rice.

Notes

  • Substitute ground chicken or beef for turkey if preferred.
  • Add spinach or bell peppers to the sauce for extra vegetables.
  • Store leftovers in the refrigerator for up to 3 days.
