For the meatballs:
- 1 lb ground turkey
- 1/4 cup almond flour or breadcrumbs for non-low-carb option
- 1 egg
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the sauce:
- 2 tablespoons olive oil
- 1 small onion diced
- 3 cloves garlic minced
- 1 can 14 oz diced tomatoes
- 1/2 cup chicken broth
- 1/3 cup sliced Kalamata olives
- 1 teaspoon dried basil
- 1/2 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley and feta cheese for garnish

For the meatballs:
In a mixing bowl, combine ground turkey, almond flour, egg, parsley, garlic, oregano, salt, and pepper. Mix until just combined.
Form the mixture into small meatballs, about 1.5 inches in diameter.
For the skillet:
Heat olive oil in a large skillet over medium heat. Add meatballs and cook for 2-3 minutes on each side, until browned. Remove and set aside.
In the same skillet, sauté onion and garlic until softened, about 3 minutes.
Stir in diced tomatoes, chicken broth, olives, basil, paprika, salt, and pepper. Bring to a simmer.
Return meatballs to the skillet, cover, and simmer for 10 minutes, until meatballs are cooked through and sauce thickens slightly.
Garnish with fresh parsley and crumbled feta cheese. Serve as-is or with zucchini noodles or cauliflower rice.
- Substitute ground chicken or beef for turkey if preferred.
