Ingredients
  

For the shrimp:

  • 1 lb large shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • Juice and zest of 1 lemon
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the asparagus:

  • 1 lb fresh asparagus trimmed
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions
 

For the shrimp:

  • In a mixing bowl, toss shrimp with olive oil, garlic, lemon zest, juice, smoked paprika, salt, and pepper. Let marinate for 5-10 minutes.
  • Heat a large skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes per side, until pink and opaque. Remove from the skillet and set aside.

For the asparagus:

  • In the same skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
  • Add the asparagus and cook for 5-7 minutes, tossing occasionally, until crisp-tender. Season with salt and pepper.
  • Return the shrimp to the skillet and toss with the asparagus to combine. Serve immediately, garnished with extra lemon zest or parsley if desired.

Notes

  • Substitute shrimp with scallops or chicken if preferred.
  • Add a sprinkle of red pepper flakes for a hint of spice.
  • Serve with cauliflower rice for a heartier meal.
