Cheesy Spinach-Stuffed Mushroom Caps

Ingredients
  

  • 16 medium-sized cremini or white mushrooms stems removed
  • 1 cup fresh spinach chopped
  • 4 oz cream cheese softened
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 clove garlic minced
  • 1 tsp olive oil
  • 1/4 tsp Italian seasoning
  • Pinch of salt and pepper

Instructions
 

  • Prepare Mushrooms: Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper. Clean mushrooms and remove stems, creating a cavity for stuffing.
  • Make Filling: Heat olive oil in a pan over medium heat. Sauté spinach and garlic until wilted, about 2 minutes. Remove from heat. In a mixing bowl, combine cream cheese, Parmesan, mozzarella, sautéed spinach, Italian seasoning, salt, and pepper. Mix well.
  • Stuff Mushrooms: Fill each mushroom cap generously with the cheese mixture. Place them on the prepared baking sheet.
  • Bake: Bake for 12–15 minutes, or until the mushrooms are tender and the filling is bubbly and golden on top.
  • Serve: Allow to cool for 2–3 minutes before serving. Garnish with extra Parmesan or fresh parsley, if desired.

Notes

  • Add diced cooked bacon or sausage to the filling for a heartier variation.
  • Make ahead: Stuff the mushrooms and refrigerate until ready to bake.
  • Substitute cream cheese with ricotta for a lighter texture.
