Ingredients
  

  • 1 large cucumber English cucumber preferred
  • 1 ripe avocado
  • 1 tbsp lime juice
  • 1 tbsp fresh cilantro or parsley finely chopped
  • 1 tsp olive oil
  • Pinch of chili flakes optional
  • 1 tbsp mixed seeds e.g., sesame, sunflower, chia
  • Pinch of salt and pepper

Instructions
 

  • Prepare Cucumber: Slice the cucumber into 1-inch thick rounds. Use a melon baller or small spoon to hollow out the center, leaving a small base.
  • Make Avocado Filling: In a mixing bowl, mash the avocado with a fork until smooth. Mix in lime juice, chopped herbs, olive oil, salt, and pepper. Add chili flakes if desired.
  • Fill the Cups: Spoon the avocado mixture into each cucumber cup, slightly overfilling.
  • Add Crunch: Sprinkle mixed seeds on top of each cup for added texture and flavor.
  • Serve: Arrange on a platter and serve immediately, or refrigerate for up to 30 minutes before serving.

Notes

  • Use lemon juice instead of lime for a milder citrus flavor.
  • Add finely diced red onion or cherry tomatoes to the avocado mixture for extra texture.
  • Best served fresh to maintain the crispness of the cucumber.
