Velvety Raspberry Swirl Cheesecake

Equipment

  • Mixing bowls

  • Fine mesh sieve

Ingredients
  

Crust:

  • 1 ½ cups graham cracker crumbs
  • cup granulated sugar
  • 6 tbsp unsalted butter melted

Cheesecake Filling:

  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

Raspberry Swirl:

  • 1 cup fresh or frozen raspberries
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Instructions
 

Prepare the Crust:

  • a. Preheat oven to 325°F (165°C).
  • b. Mix graham cracker crumbs, sugar, and melted butter in a bowl until combined.
  • c. Press mixture firmly into the bottom of a springform pan. Bake for 8 minutes. Let cool.

Make the Raspberry Swirl:

  • a. Combine raspberries, sugar, and lemon juice in a saucepan over medium heat. Cook until raspberries break down, about 5 minutes.
  • b. Strain mixture through a sieve to remove seeds. Set aside to cool.

Prepare Cheesecake Filling:

  • a. Beat cream cheese and sugar together until smooth.
  • b. Add eggs, one at a time, mixing after each addition.
  • c. Mix in vanilla extract and sour cream until fully combined.

Assemble the Cheesecake:

  • a. Pour cheesecake filling over the crust.
  • b. Drop small dollops of raspberry puree over the filling. Use a toothpick or skewer to swirl the puree into the batter.

Bake the Cheesecake:

  • a. Place the springform pan in a larger baking dish. Add hot water to the dish to create a water bath.
  • b. Bake for 55–60 minutes, or until the edges are set but the center is slightly jiggly.

Cool and Chill:

  • a. Turn off oven and crack the door open, letting the cheesecake cool gradually for 1 hour.
  • b. Transfer to refrigerator and chill for at least 4 hours or overnight before serving.

Notes

  • Ensure all ingredients are at room temperature to avoid lumps in the filling.
  • Use fresh raspberries for a brighter flavor.
